With Frozen Stir Fry Vegetables You Can Make a Meal in Minutes

Many varieties of frozen stir fry vegetables are available: Japanese, Teriyaki, Lo Mein (with noodles), Singapore, Oriental, and Szechuan. Last night I fixed chicken stir fry with broccoli, sugar snap peas, green beans, carrots, celery, water chestnuts, onions and red peppers. When you use frozen stir fry vegetables you have to be careful not to overcook them.

The pan should be heated until it is almost smoking and you cook the vegetables for five to seven minutes. No more, or you will have a gloppy mess. The vegetables will taste boiled, rather than stir fried.

Stir frying is a quick and healthy technique, detailed in the article, "What is Stir Fry?" Posted on the Wise Geek website, the article says you need to think smaller when you think stir fry. The ingredients should be cut into small, uniform pieces to ensure uniform cooking. "Thumb-size for the chunks is a good way to remember the ideal size," the article notes.

The Family Wok website has posted "Basic Stir-Fry Instruction" and photos on its website. The wok or frying pan (I use a cast iron skillet) needs to be heated until it is smoking hot. Ingredients that take the most time to cook are added first. If liquid forms on the bottom of the pan, it is not hot enough or you have too much in the pan. Vegetables should be cooked until they are "crisp tender."

As with all stir fry, you need to complete your prep work before you start cooking. Though I used Top Ramen noodles, I did not use the seasoning packet to cut down on salt. Thickening with corn starch can be a bit tricky, so watch the pan carefully. Your goal is a slightly thickened stir fry, not vegetable pudding. Short on time? Ingredients

1 scallion, white and green parts, diced
2 tablespoons peanut or canola oil
2 tablespoons minced ginger (fresh or from a jar)
2 cloves garlic, minced (fresh or from a jar)
1 1/2 cups cubed chicken breast
1-pound bag frozen stir fry vegetables
2 cups lower salt chicken stock
2 tablespoons lower sodium soy sauce
3 tablespoons sugar-free apricot jam
1/8 teaspoon red pepper flakes
3-ounce package Top Ramen noodles, chicken flavor
2-3 tablespoons corn starch

Method

Dice scallion and set aside. Cut chicken into 3/4" cubes. Rinse Ramen noodles under running water and set aside. Pour oil into wok or skillet and heat until almost smoking. Add ginger and garlic. Fry for a few seconds and add chicken. Cook chicken until it starts to brown, remove and set aside. Pour a little more oil into the pan. Add frozen vegetables and stir fry for about two minutes. Return chicken to pan and add chicken stock, soy sauce, jam, and red pepper flakes. Add Ramen noodles and break them up. Cover pan and cook for another minute. Thin corn starch with cold water, add to pan and cook, stirring constantly, until mixture thickens. Plate stir fry, garnish with scallions, and serve with white or brown rice.

Cooking meals while camping isn't as hard as it sounds. Keep in mind you don't need to make elaborate meals, you can keep it simple. You don't have to cook over a campfire, instead you may choose to cook with a Coleman grill which runs on propane gas. It's really all up to you. An Introduction to Dehumidifiers

Humid air is, by definition, saturated with water. It hangs in the air in a sort of limbo, waiting to land on something. It condenses on your skin, upholstery, walls, the cat, everywhere. This can cause not only a lot of discomfort for you and your cat, but also extensive damage to your house. Paint, wallpaper, wood, and art suffer especially.

Worst of all, excess humidity makes for a wonderful Petrie dish for mold and other types of harmful bacteria, presenting a health threat you can't afford to ignore. About the only thing that can benefit from a constantly humid environment are cigars.

Dehumidifiers reduce the moisture in the air while reducing or eliminating deterioration of equipment due to rust, rot, mold and mildew. Home dehumidifiers remove from five to 15 quarts of water from the air daily.

All dehumidifiers are noisy - about as noisy as a window-mounted air conditioner - due to the fan and compressor. The fan draws air from the room, moves it through the machine, and blows it back out to the room. The compressor circulates the refrigerant through the evaporator coils.

The evaporator coils cool the air. This causes all the water to condense on the evaporator coils. The water then drips into a condensation pan, which diverts the water to the reservoir bucket.

The condenser coils then warm the dried air back up to room temperature before it is blown back out to the room. These wear out quickly and must be replaced every season.

Note that some reservoir buckets are bigger than others, ranging in capacity from 10 to 65 pints. When the reservoir bucket gets full, the machine automatically stops, thus preventing overflow. The bucket can then be removed, dumped out, and returned.

Alternatively, most models can be fitted with a drain hose or regular garden hose, which continuously lets water out into any drain.

There's not really a whole lot that you can say about an item like this - it's a skillet. You put it on the stove, it gets hot, and then you cook food in it. In that regard my girlfriend and I are extremely satisfied with this product, but I'm writing this review because of our interaction with Old Mountain. We have several Old Mountain skillets of various sizes, and only occasionally need to use this enormous one, so we were well past our Amazon return window when we noticed a crack in the cast iron near the handle, running all the way down to the base. I can't say whether it arrived that way or if it was something we did, and I was resigned to having to purchase a new one, but my girlfriend decided to contact Old Mountain first. I'm glad she did - they sent us a brand new skillet, no questions asked, and when we asked for the address to ship the damaged one to, they told us not to bother, and only asked us to recycle it rather than throw it away. I will certainly be purchasing from them again in the future.

The bright blue light can be reduced or eliminated by using a small 1/2" square piece of blue or black electrical tape over the single LED face inside the unit.
Only problem noticed during operation is that the vapor oulet nozzle/orafice slot seems to occasionally clog, completely stopping humidity output. I wonder if the company will recall this nozzle?
