4 chicken breasts with the skin and 1st wing bone
3 tablespoons peanut oil
Salt and black pepper, to taste

How to make it:

Preheat the oven to 350 degrees F. Heat a heavy skillet over a moderate heat. Use a well-seasoned cast iron skillet for this, if you have one. Season the chicken with salt and black pepper on both sides, then lay it skin-side down on a cutting board.

Hit the chicken breasts a few times with a meat mallet but do not flatten them. Pounding them, a couple of times will stop the chicken breasts from curling up while you cook them.

Add the oil to the heated pan and swirl it around. Put the chicken in the oil, skin side down, and let it sizzle gently. Turn the heat down if it is cooking too quickly. Cook the chicken for three minutes, then transfer the skillet to the oven, without turning the chicken over, and cook it until done.

You can deglaze the liquids in the pan when the chicken is cooked, using wine, or stock, and then add seasonings and some cream or butter. This makes a great sauce to serve over your pan-roasted chicken. Serve it with mashed potatoes and green beans for a flavorful and elegant dinner.

Cajun Chicken - Chicken Fricassee

Chicken Fricassee

This is a simple recipe, it only takes say 30-45 minutes prep time and it cooks in 4-5 hours, but the longer you keep it cooking the more flavor you have. Do not let the prep scare you it is simpler that it sounds. I am just trying to be through, and well defined, so that is it well understood.

Ingredients:

Cut veggies as described below

1 large whole Onion

2 bunches of Green

1 bunch Parsley (cut these with kitchen scissors)

1 Green Pepper

1 Jalepino Pepper

Set this column aside for later

1 chicken leg and thigh (per person)

1 ½ cup oil

1 cup flour

1 Tablespoon Hungarian Paprika

(this has more flavor, less heat, it is also darker in color)

Salt and pepper to taste

1 Tablespoon of chicken seasoning

2 cloves garlic or 2 Tablespoons garlic in a jar

2 Cups of Water

1 Cup rice cooked (per person) serve on the side. Cover with the Rue.

Wash above ingredients, chop (except parsley) into Small chunks about ½ inch long, & wide. Cut parsley with kitchen scissors. Put into a large bowl. Mix well set aside. NOTE: If you want a less hot meal remove the seeds from the jalepino pepper.

Now take a large skillet, cast iron if you have it, if not that is ok. This is called Rue. Add oil and flour, stir well over high heat. Stir constantly. Keep on heat until this mixture turns a Medium brown (most Cajuns make it very dark, but if you do it sort of taste burnt, in my opinion). I recommend cooking until it is a little darker then a wooden spoon. Add the seasonings, paprika, salt & pepper, chicken seasoning, & garlic. Add the cut up veggies and MIX well. Cook an additional 5 (five) minutes. This mixture will be thick,

Skin the chicken wash thoroughly. I season the chicken with garlic powder, paprika, & chicken seasoning. Place in crock-pot to cover the bottom. 1 layer of chicken take ½ of the Rue cover the chicken, make a second layer of chicken, cover with Rue just like the first layer. Add 2 cups of water cover and cook 4-5 hours until chicken falls off the bone.

Carefully remove the chicken, place on a plate take the rue and remove all the excess oil floating on the top.

NOTE: Placing in a bowl and placing in the freezer for 10 minutes, until cooler easily does this. The oil rises the Rue sinks. Spoon the excess oil off the top. Throw away the oil from the top. (The more oil you can remove the healthier your meal will be.) Place the Rue back in the crock-pot and turn to high to reheat, or place in microwave and cook 3-5 minutes. Just until warm it is already cooked.

SERVING SUGGESTIONS:

You can either serve the chicken on the bone or remove bones the choice is yours. I usually remove the bones and serve on a plate with either plain or dirty rice. (I will write a Dirty Rice recipe in another article. It will be in food-cooking, recipes Dirty Rice. It adds a wondeful compliment to this dish, but it can be server with regular or brown rice)

Cover the chicken with Rue mixture and serve with your favorite side dish. If rice is your choice cover with Rue. Serve warm.

Stay Warm This Winter With an Electric Space Heater

Cold weather will soon be here and the worry about higher heating cost has many of us looking for ways to reduce our heating bill. One way to slash heating bills and stay warm is to use an electric space heater. With soaring natural gas, propane and heating oil prices, electric heaters seem the natural choice as electricity costs are not predicted to increase as much as other fuels.

Another advantage is that heating a chilly room is less expensive than turning up the thermostat. For every degree you turn down your thermostat, you can save 3 percent to 5 percent on heating costs.

There are two main types of electric heaters: radiant and convection.

Radiant Heaters. As far as I'm concerned, using a radiant heater in the home is a waste of electricity. They only heat objects as opposed to heating the surrounding air. A radiant space heater would be a good choice to use in an office where everyone is warm but one person or maybe to use as a foot warmer while sitting at a desk.

Convection Heaters. This type of electric heater warms the air in the room and uses either the natural air currents in a room or a fan to circulate warm air. The most popular space heaters are oil-filled and look like radiators. They are heavy but you don't have to worry about them falling over. The oil contained in this type of heater is permanently sealed within the heater and never needs to be refilled. The oil is heated when the unit is turned on. Although they can be slow to heat up, the oil inside stays warm for a long time once it reaches the temperature setting.

Be aware of extravagant claims and recalls. Consumer Reports magazine has the best review of electric space heaters. You can also check with Good Housekeeping magazine and Popular Mechanics magazine for reviews and buyer information.

There are at least two extravagant claims that I'm aware of. One manufacturer has a full page ad designed to resemble a news report about a miracle fireplace the uses 'fireless flame' technology and gives you the peaceful flicker of a real fire but without any flames, fumes, ashes or mess and all you have to do is plug it in. The heater rolls from room to room and uses the same energy as a coffee maker. They also claim it produces an amazing 5,119 BTUs.

The only thing special about their electric heater is the descriptive exaggerations. Most electric heaters provide up to 1500 watts or 5120 BTUs of heat. This is the maximum amount of wattage that can be used safely in a standard household electrical outlet.

The manufacturer of quartz infrared heater, another manufacturer that heavily advertises exaggerated claims, states that its space heater can "cut your heating bill up to 50% while keeping you toasty warm." Not so, according to reviews at Amazon.com and InfomercialRatings.com who say that the infrared heater either failed within a few weeks or did not heat a very large area. It would take several years to recoup the high purchase price of the space heater not in a matter of weeks as they claim.

What to look for in a space heater.

o Look for a UL (Underwriters Laboratories) mark. This mark on a product indicates that UL technicians tested the model for possible safety problems.

o A thermostat is a must have. With a thermostat you can control the temperature of a room and keep it constant. Most modern portable heaters have this feature.

o Automatic shutoff. The better space heaters come with an automatic shutoff feature, in case the unit is turned over or overheats.

o Other safety features. Helpful features include indicator lights to let you know when the unit is on. Also, grilles that cover the blades of the fan and the heating element protect against contact with people and pets.

Where to look for product reviews.

o Amazon.com has customer reviews of many space heaters on the market.

o ConsumerReports.org has expert unbiased product ratings and reviews. Content is available only to subscribers.

o Google whatever you're interested in buying. For instance, cell phone reviews, Honda Fit reviews, or computer reviews.

HORRIBLE EXPERIENCE - FFC - Rhode Island
I bought mine from another website. First one arrived, the box was destroyed, so I did not take a chance and refused it. Called for another one. After waiting for a strong person to carry it to my cellar, unpacked it and the castor was broken. The vendor kindly refunded some of the money because of all the hassle I had gone through with now this one. I figured, I will look for a castor at a hardware store. In the meantime I put some of the packing material under the corner of the machine that had no castor until I could acquire one. I hooked up the auto-pump hose, set it and figured, forget it. After a few days I went down the cellar and had water everywhere. The water was spitting out what is called "manual pump" This is if you want to buy a different hose, connect it and I guess manually pump it. However, that hole was supposed to have a "stopper or plug" which it did not. I called Royal Sovereign to tell them this. The guy did not know what I was talking about so asked me to send pictures via email which I promptly did. He said he would call me, he never did. After a few hours, I called him back, to my dismay the email address he gave me belonged to an employee who had quit, so after a runaround with the operator, she said someone else was using the email address. Is that legal? He still had no answer for me and said it should work without the plug. He had no plug, did not help with the castor. Told me to ship it to them. Would you trust sending a 250.00 machine to a company like this? Plus, I am from the East Coast and they are in the West, can you imagine the price to mail this heavy unit to them. It had already cost me almost 30.00 for shipping the first time. I would never ever buy anything made by Royal Sovereign, their Customer Service just does not care about your problem.

The Wahl clipper does what it should, especially at the price. I think that it will run a long time on the AA batteries. I prefer this over the rechargeables that are never charged when you need them and eventually wear out. It trims well and is well made for the price.

What I DON'T like:
1) The clipper head tines are flat on the end instead of tapered, so you have to go over your beard several times to clip it all. The tines do not comb the hairs into the slots to be cut, at least not very well.
2) The plastic attachments work well at setting the clip height, but they are VERY hard to get on and off - I feel that I am going to break one every time I remove it. Not well designed. There is one attachment that is adjustable - I leave that on most of the time to minimize removal, but I still have to take it off to use the bare head for close trimming.
3) The base unit does not hold all the attachments very well - they are always scattered around my counter.

Would I buy one again - probably - this is still a very good deal. I do expect to break one of the plastic attachments in the near future. I'll bet that they are not available separately!

The Best Way to Keep a Shaped Beard Neat

If, like myself, you're one of those guys who like the idea of having a beard but doesn't want to look quite like a walking hedgerow, you need to keep it in check. The best way to do that? Read on!

A while back it occurred to me that I was now about the right age to re-grow my beard. I have this theory of sorts that men either grow beards when they're young as a sign perhaps of  their new-found manliness or to fall in with current fashion, or when they're older when they like to think that they will look all patrician and cool.

Being of the latter persuasion I laid away my straight razor for a while and let the fungus sprout. As I'd been clean shaven for all those years since the young beardy-trendy days it did come as a bit of a shock to see that, where dark, shiny beard growth once flourished, the whiskers now popping out were distinctly lighter in colour - like white!

Why I thought it would be any different I don't know - I'm grey enough on top of my head. In any event, a few weeks went by and I passed through the designer stubble stage, the itchy stage and the thoroughly disreputable-looking stage to awake one morning with a full-grown beard. Yippee!

Well, not quite. As the whiskers grew longer, so they looked more and more untidy until I started to resemble not a patrician but a - well, a bum, not to put it too finely! What to do? Trim the thing of course! I decided on a modern style, quite short overall with thin sideburns and transverse bits between the bow of the jaw and the chin. Easy!

Out came the straight razor. What? A straight razor for beard trimming? Yes, sir. I had tried electric trimmers and multi-blade contraptions in the past and found that the first tend to grab the hair if trying to trim too closely (a painful experience!) and the second clog dismally. Also, neither gives that really sharp, crisp line between beard and shaved skin that I wanted.

Not so with the straight razor. I've used one for years for the whole-face shave and believe me you won't get better once you've mastered the technique (takes about a whole couple of weeks usually). For accurate beard trimming the straight is king. Why?

Well, the electric trimmer and multi-blade or double-edge razor each have a limiting factor. For the electric it's the size of the cutting head and its inability to shave really closely. For the multi-blade it's the fact that, due to the blade ends being inboard of the cartridge ends, a really crisp line is almost impossible to achieve and they clog readily.

Think of it like grass growing along a path and trying to keep it neat with just a plain old mower. Sure, it cuts the grass short but, little by little, the grass encroaches on the path. What to do then? Simple - get the long shears out. A special tool for a special job - and it's the same with a straight razor (though please don't try trimming your lawn edges with one!)

Because it has no blade guard, a straight razor can shave a very precise edge along a line of stubble, particularly where the hair line dwindles out - that line down from the moustache to the chin is a good example as there are usually a few whiskers outside the main beard growth area. Leave these in place - and they are very difficult to trim with the electric or multi blade - and you will always look that little bit unkempt. Take them off with a straight razor and see the difference!

Most guys think of straight razors as items that are used strictly by Luddites or men who just want to look macho. Well, straight razor users may well have both categories within their ranks but, generally speaking, they are just everyday men who are either fed-up with paying through the nose for throwaway cartridge systems or just enjoy a traditional, relaxing shave.

Did I say relaxing? With a straight razor? Yes, indeed. Once the technique is learned - and it really isn't difficult - it's a great way of getting some 'me-time' because the one thing you can't really do is rush a shave with a straight. So relax - get up quarter of an hour earlier, ease into the day. Believe me, when you have finished trimming that beard you can rest assured that you will look crisper and neater - and probably feel a whole lot better in yourself - than those other guys frantically scraping away while sinking their second coffee and putting their tie on all at the same time!
