John and Monica show you how to make a baked apple pancake. Recipe is pretty simple: Preheat Oven to 450 degrees. A Cast Iron Skillet is a MUST for this recipe. Ingredients: 2 small apples peeled and diced into big chunks. 4 Large Eggs 1/2 Cup Whole Milk 1/2 Cup Flour 1 Tablespoon Sugar 1/2 Teaspoon Vanilla Extract 1/4 Teaspoon Salt 3 Tablespoons of Butter 2 Tablespoons Brown Sugar 1 Teaspoon Cinnamon Instructions: -- Preheat oven to 450 degrees F. -- In a blender, puree the eggs, milk flour, sugar, vanilla and salt untill well combined -- Heat a medium or large cast-iron skillet over medium high heat. Add butter and melt. Add brown sugar and stir with butter to start caramelizing. Quickly add apple chunks and stir with butter and brown sugar, let caramelize for several minutes, add cinnamon, stir with apples. - Add batter to skillet directly on top of apples. Transfer skillet to pre-heated oven and bake for 12-14 minutes until pancake is puffed. Dust with powdered sugar. Serves 4 if you're polite, 2 if you're really hungry.
